Only one bee was still inside, as we arrived. It was put outside and was able to fly home on its own.

Så skrællede og slyngede vi tavlerne. Det er et job, der er tilfredsstillende for alle sanser. Honning er meget klistret, og man er nødt til at stoppe op for at slikke og tørre sine fingre grundigt i en af de fremlagte klude med jævne mellemrum. Honningen mod slyngens sider lyder som den lifligste forårsbyge og duften er ubeskrivelig.
We then uncapped the cells and extracted the honey. All senses are satisfied in the process. The sticky honey clings to our fingers, and requires licking and drying off at frequent intervals. The extractor sounds like rain in spring and it smells so delicious.

Honey is delicious, an we're all waiting for the first honey of the year - and strawberries. Some years I harvest the first honey in early may, before the canola starts flowering. It's a strong taste from apple blossoms, dandelions and Prunus (don't know the English word). But this year the canola was very quick. I harvest at least twice from my 2 hives, keeping the honey separated, which makes 4 different tastes. Even honey harvested on the same day from the two hives next to one another are differnt in taste and texture. Some years I have 8 or 10 different honey-types, but they all turn hard, none remains liquid as in Australia.
